Since I talk about her every single day, it's safe to assume if I say "my friend" I'm referring to the lovely Belle. So anyway, my friend made some yummytastic cookies last week that I've been wanting to reproduce here in my own kitchen. She emailed me the recipe last night, so here we go!
The recipe is for traditional Cowboy Cookies which are hands-down the ultimate cookie. But, I am dropping a few of the add-ins thereby making them not Cowboy Cookies. Not really. I told the boys that I'd make Cowboy Cookies while they napped and they both said: "Cowboy Lady cookies!" since that is their word for someone who is not a traditional cowboy.
My Moomers was so excited he woke up early from his nap to "help." ('My help you, Mama') It's much, much less stressful to receive "help" from just one boy so our cookie dough was done in no time!
So here is the recipe. I have my first batch in the oven and I can't wait for them to come out!
Cowboy Lady Cookies:
3 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. ground cinnamon
1 tsp. salt
1 1/2 c. butter
2 c. plus 1 tblspn. butter, room temp.
2 c. firmly packed light brown sugar
3 eggs
1 tsp. vanilla extract
2 1/2 c. chocolate chips (I used raisins instead which aren't called for in the Cowboy Cookie recipe)
3 c. oats
9 oz. sweetened coconut flakes (I only had a 5 oz. unsweetened bag, but after all that sugar I don't think it will be missed...except for the sweetened is usually softer/fluffier)
2 c. chopped pecans (I didn't add them)
350 20-30 min. (these are big cookies!) I baked on parchment paper
-Mix flour, baking powder, baking soda, cinnamon, salt in a medium bowl (a.k.a: dry ingredients)
-Beat butter, add sugars then eggs and last vanilla
-Combine both then add oats, coconut, raisins (and/or the other stuff if you're adding it)
-Measure out leveled ice cream scoops of dough, bake 3" apart on a cookie sheet.
Yummy!
ps: Apparently the dough freezes really well so you can scoop out balls and freeze in a ziplock bag for later. Also, if you can wait they taste even better after refrigerating the dough overnight.
